The Original, The Best, JERK

This is how Jamaicans BBQ. From the streetfood on the roadsides to back yard cuisine. Fine dining in the town, Jerk drums in the country or on the beaches, you can always find this amazing mixture of Jamaican herbs and spices flowing through the air!

Local folklore tells of Jerk having been created by the Maroons, runaway slaves, as a seasoning for wild pig which was smoked over green pimento leaves and buried in the hillsides of the Blue Mountains to avoid detection from the English Redcoats. This very versatile rub adds an authentic kick to chicken, lamb, beef, pork, fish & vegetarian dishes.

Simply rub a small amount – 1oz jerk seasoning: 2.2lbs / 1kg – into your meat or fish, for best results marinate overnight to absorb the spicy flavor and then cook until done on your barbeque or in your oven.

Jerk BBQ Ribs

This is an excellent Caribbean marinade for Chicken, Fish, Beef and Turkey. The combination of spices, as well as the mild heat from the scotch bonnet peppers, make this a must-have in your cupboard.
Walkerswood Barbecue Ribs

Method:
  1. Combine all the marinade ingredients and coat ribs. 
  2. Cover and refrigerate for about 4 hours.
  3. Light the barbecue or pre-heat oven to 150C.
  4. Barbecue the ribs for 20-40minutes turning occasionally and basting with sauce.
  5.  If baking cover with foil and cook, basting occasionally for about 1 hour.

Drunk Jerk Chicken

Jerk Seasoning

Ingredients
  

  • 1 Whole Chicken, cleaned
  • 4 Tbsp Walkerswood Jerk Seasoning
  • 1 Small Onion
  • 3 oz 90g Garlic Powder
  • 2 tbsp Salt1 Can Favorite beer
  • 4 Butter
  • 1 Can Favorite beer

Notes

Method
  1. Clean chicken thoroughly (Do not cut up).
  2. Season chicken with salt and garlic powder to your taste.
  3. Rub Walkerswood Jerk Seasoning on chicken inside and out.
  4. Cut up small onion and stuff in middle of chicken.
  5. Let chicken sit in refrigerator overnight.
Cooking Instructions:
  1. Preheat oven to 190 degrees when ready to bake.
  2. Open a can of beer and place in the middle of a roasting pan.
  3. Set chicken on top of open beer can and bake in oven for 1 hour or until done.
  4. Baste chicken with butter throughout cooking.
  5. Chicken is ready tender, juicy, and ready to eat!
Serving Suggestions:
  1. Serve chicken with rice or rice & peas.
  2. Use more jerk seasoning if you like it a little spicier.
Optional Gravy Sauce:
  1. Take juice from the chicken (with onions and beer) and add 3 to 4 tablespoons of flour. Mix well until smooth (no lumps) and simmer in a sauce pan over medium heat to make gravy sauce.

Stir Fried Vegetable with Jerk Tofu

Ingredients
  

  • 1 tbsp  Walkerswood Jerk Seasoning
  • 1 lb  Firm Tofu , cubed 
  • 2 tbsp Palm Sesame or Olive Oil
  • 1 Onion  Onion ,sliced 
  • 2 cloves  Garlic, chopped   Oil for frying 
  • 1 kg Your choice of vegetables - Carrots, Zucchini, Cauliflower, Green Cabbage, Buk choy, Red Capsicums or Broccoli

Method: 
  1. Mix together Jerk seasoning and oil, add to tofu and marinate for at least an hour. 
  2. Heat the frying oil in wok. 
  3. Deep fry the tofu cubes for 3-5minutes and reserve. 
  4. Pour out most of the oil and stir fry the onion and garlic, then begin to add the other vegetables, hardest first. 
  5. Cook very lightly, add the tofu and stir in gently until hot. Serve immediately.

Gingery Jerk Chicken

Method 
  1. Sprinkle salt on Chicken and rinse. Pat dry. 
  2. Whisk together all other ingredients in a large bowl.  
  3. Put chicken pieces to marinate in mixture for at least 2 hours or preferably overnight.  
  4. Place marinated chicken in a roasting pan, cover with foil and bake at 180 degrees for 20 minutes.  
  5. Remove foil and bake uncovered for a further 45 minutes or until cooked.
